Golden Shark Fin Soup (Easy Chinese Style)

■ Ingredients for one person

• Shark fin (for soaking and soup)...20-30g
• Chicken stock (granules)...2 teaspoons
• Water...250ml
• Egg...1
• Green onion (finely chopped)...a little
• Ginger (can be used in a tube)...a little
• White sesame seeds...a little
• Sesame oil...a few drops

Seasoning
: 1/2 teaspoon soy sauce
, a pinch of salt,
a little white pepper,
1 tablespoon water-dissolved potato starch (for thickening)

■ Preparation

• Shark fin: Rehydrate and cut into bite-sized pieces.
• Egg: Beat
• Potato starch dissolved in water: Mix in advance.

■ How to make it

  1. Put water, broth, and ginger in a pot and heat
  2. Once boiling, add the shark fin and heat for 1-2 minutes
  3. Add the seasonings and thicken lightly with water-dissolved potato starch
  4. Reduce the heat and pour in the eggs in a thin stream
  5. Place in a bowl and top with sesame oil, green onions, and white sesame seeds

■ Points

• The eggs are fluffy just before turning off the heat.
• It's best not to thicken them too much for a more elegant dish.
• Add sesame oil at the end to add flavor.
