Golden Bagna Cauda

Ingredients for 1 serving

Vegetables (total 150-200g)
• Red and yellow bell peppers... 1/6 of each
• Broccoli... 3-4 florets
• Cherry tomatoes... 3-4
• Purple radish or purple carrot... a small amount
• Yellow zucchini... a small amount

sauce

• Garlic...1 clove
• Anchovies...2 fillets
• Olive oil...2 tablespoons
• Milk...1 tablespoon

■ Preparation

• Cut the vegetables by color.
• Lightly blanch the broccoli in salted water.
• Remove the core from the garlic and mince it.

■ How to make it

  1. Add olive oil and garlic to a small saucepan and heat over low heat
  2. Once the aroma comes out, add the anchovies and mash them
  3. Add milk and heat gently
  4. Arrange the vegetables radially on the plate
  5. Place the sauce in the center

■ Points

• Do not overcook (to prevent it from turning pale)
• Do not overcook vegetables to preserve their color
• White or wooden plates are recommended
