- Yellowtail fillet: 2 slices
- Soy sauce: 2 tablespoons
- Mirin: 2 tablespoons
- Sake: 1 tablespoon
- Sugar: 1-2 teaspoons
- Oil: small amount

Preparation (important)
- Lightly sprinkle salt on the yellowtail and let it sit for 5 to 10 minutes
- Wipe away any excess moisture with a paper towel.

How to make it
- Add oil to a frying pan and fry the yellowtail skin side down
- Once both sides are browned,
add soy sauce, mirin, sake, and sugar. - Simmer over medium heat until the sauce thickens and becomes glossy, then turn off the heat
