• Shark fin (for soaking and soup)...20-30g
• Chicken stock (granules)...2 teaspoons
• Water...250ml
• Egg...1
• Green onion (finely chopped)...a little

Seasoning
: 1/2 teaspoon soy sauce

1 tablespoon water-dissolved potato starch (for thickening)
■ Preparation
• Shark fin: Rehydrate and cut into bite-sized pieces.
• Egg: Beat
• Potato starch dissolved in water: Mix in advance.
■ How to make it
- Put water, broth, and ginger in a pot and heat
- Once boiling, add the shark fin and heat for 1-2 minutes
- Add the seasonings and thicken lightly with water-dissolved potato starch
- Reduce the heat and pour in the eggs in a thin stream
- Place in a bowl and top with sesame oil, green onions, and white sesame seeds
